How To: Grill Squash
Grilled squash is delicious. Squash is very easy to grill and holds up well while flipping over grill racks. Prefect grilled squash starts with the selection of your squash; when picking squash to grill, look for squash that are heavy (not large), have a rich color and have no bruises or blemishes. Summer squash is bright in color while winter squash will have a deeper color. Now that you have your squash selected, lets begin grilling.
Preparation Time: 15 minutes
Cooking Time: 20-30 minutes
INGREDIENTS
Squash, as much as you like
Creole Seasoning (found in your local grocer season isle or order online here)

Butter
Garlic and Herb Season
How To Grill Squash
Spray the grill racks with anti-stick spray such as PAM
Turn on the grill, close the top and let it warm. I generally turn all burners on high to get warm and once cooking begins reduce the heat to medium. Continue with step 3.
Slice the squash length-wise in halves. Larger squash can be sliced in thirds with one piece having seeds on both sides (these actually taste better). DO NOT make the slices too thin, you will have problems flipping the squash and thinner slices are very easy to burn.
Melt enough butter to cover the squash (both sides). It is easiest to place the butter in a bowl and melt it in the microwave. You may wish to melt it in a pot over the oven. Either way works.
Place the Squash on the grill starting with the cut-side (seed/exposed side) down.
Brush butter over squash
Sprinkle Creole Seasoning over buttered squash. Be careful here, too much will ruin the meal and too little will not be noticeable. Keep in mind you will be seasoning the other side as well.
Sprinkle Garlic and Herb seasoning over buttered squash
Let squash grill for 5-10 minutes.
Flip Squash with tongs, repeat steps 6, 7 and 8.
After 5-10 minutes, test the squash to determine if it is fully cooked. Cooked squash will be extremely tender. You want the squash tender without being burned – you should be able to bite into it and it fall apart in your mouth, not crunch through it like a chip. This is a great time to taste test and see if you have too much or too little Creole Seasoning.
If undercooked, flip and repeat until desired tenderness is reached. Some of the thinner squash may be complete while the thicker slices may still be hard. Place the cooked squash on the top rack away from the flame to prevent it from being burned while the rest of your squash cooks.
Tips
Standing near the grill and keeping an eye on the squash to prevent burning will yield better tasting squash
